French Taste and Teppan At Aéroport Charles De Gaulle Paris

French Taste by Chef Guy Martin (2* Michelin chef) is open for the summer business at the Charles de Gaulle airport, Paris' main international airport. You can find this bistronomic restaurant in Terminal 2F.

It is ideal for travellers seeking authentic French flavours combined with healthy recipes. This brasserie, restaurant and café all rolled into one is a place to feel good at any time of the day and the perfect way to continue enjoying Paris and its 'Art de vivre' right to the very end of your stay.

Chef Martin's other restaurants include the Brando in Tahiti and Le Grand Véfour in Paris.

And following on last week's announcement that Chef Thierry Marx has been selected to head up one of the Eiffel Tower's restaurants beginning in 2019, comes this communiqué that he also has a new Japanese restaurant at the Aéroport CDG Terminal 1 called Teppan. Its cuisine is specialized in teppanyaki which literally translates to "grilled on an iron platter" from Japanese.  

Fresh, seasonal ingredients take pride of place, and the menu has been revised in an original and modern way: 100% French steak is served alongside Breton blue lobster. Le Teppan is quite simply a gastronomic experience symbolic of Parisian life and representative of the French 'art de vivre'.

Chef Marx has restaurants in Japan as well as being the resident Exec. Chef at Paris' Mandarin Oriental Hotel (a Palace ranked hotel).

Teppan, la gastronomie française revisitée par Thierry Marx
Ce nouveau restaurant est proposé par Relay@ADP, filiale co-détenue par Lagardère Travel Retail France et le Groupe ADP, en partenariat avec Thierry Marx. 

Chef cuisinier, à la tête de plusieurs restaurants en France et au Japon, Thierry Marx puise son inspiration de ses voyages. Avec une approche créative et innovante, TEPPAN propose une cuisine réalisée sur le teppanyaki. "Ce projet n'aurait pas vu le jour sans la volonté commune du Groupe ADP de développer la gastronomie française dans ses aéroports et la capacité de notre Groupe à le réaliser. Areas, la mondiale de restauration de concession d'Elior Group, renouvelle ainsi sa collaboration avec le chef étoilé Guy Martin et propose une table bistronomique contemporaine aux voyageurs de l'aéroport Paris-Charles-de-Gaulle : The French Taste.

C'est l'histoire d'un trio passionné par le bien-manger et l'art de vivre à la française. Sous l'impulsion de Paris Aéroport, qui souhaite développer les signatures de grands chefs français à Paris-Charles-de-Gaulle et devenir une vitrine de la gastronomie hexagonale, Areas imagine I Love Paris, inauguré au printemps 2015 dans le hall L du terminal 2E. Le concept correspond parfaitement à ses ambitions : promouvoir les codes de la bistronomie, qualitative et tendance, notamment dans les zones de voyages. C'est le chef Guy Martin, propriétaire du Grand Véfour, qui compose la carte de ce projet exigeant et pionnier. Un succès ! En 2016, I Love Paris est sacré meilleur restaurant d'aéroport au monde .

Forts de cette expérience réussie, Areas, Paris Aéroport et Guy Martin décident donc de se lancer dans une nouvelle aventure : The French Taste, une brasserie néo-classique, installée cette fois-ci dans le terminal 2F.

Derrière The French Taste, il y a bien sûr une nouvelle envie. Celle d'offrir à des voyageurs, avant l'embarquement, une expérience digne des adresses les plus courues de la capitale, avec des assiettes emblématiques de la gastronomie française, faites de produits de saison cuisinés de façon inventive et servis dans un cadre convivial et raffiné.

Créer la surprise tout en restant fidèle à ses valeurs d'excellence, pour satisfaire des clients connaisseurs ou curieux, tel était le défi de Guy Martin avec TheFrench Taste. Il le relève évidemment avec brio et créativité, veillant à l'équilibre des saveurs comme à la provenance des produits. Sa carte, qui fait la part belle au terroir et à la tradition, est néanmoins surprenante, marquée du sceau de sa cuisine inventive. 

Soupe froide de courgette au parfum de verveine ou velouté de carotte à l'orange et au cumin, rôti de veau de lait ou bar de ligne poché aux algues, tarte fine aux pommes reinette, éclats de praline rose, glace vanille, mousse au chocolat au thé matcha ou encore cheesecake au potimarron confit, pistaches de Sicile concassées... Jambon de Bayonne frotté au sel de Salies-de Béarn et maturé lentement entre montagne et océan, foie gras de canard à la cuisson douce,  subtilement relevé d'une touche de Saint-Emilion, de poivre noir, de coriandre et de muscade : même pour des planches d'excellentes charcuteries, il fait bon s'attabler chez The French Taste

L'expérience ne serait pas complète sans un cadre soigné et une équipe de professionnels qui cultivent l'art de recevoir. L'architecte Charles Zana signe le décor inspiré de l'univers du Palais-Royal pour installer une atmosphère accueillante mais sophistiquée. La façade, qui réinterprète les codes des passages parisiens, est une invitation à passer la porte pour découvrir un lieu chaleureux et contemporain. Avec son grand comptoir central et ses tables, son mobilier sur mesure, ses photos, la salle offre une ambiance différente au fil des heures. Le secret ? Lanson + Viticulture Durable en Champagne (VDC)

Tasted today at Pavillon Ledoyen's hosted Patisserie and Champagne Salon (Paris) was Lanson's just-about-to-be-released organic and Demeter certified champagne.

Notes of citrus, yellow fruits, fresh and mineral, this champagne has been aged 3 years and is the product of former Leclerc Briant held vineyards which were some of the very first in Champagne to dare organic and bio-dynamic viticultural practices. Purchased in 2010 by the house of Lanson, their acquired 16 hectares now make up much of what is being released as Lanson's Green Label: Ecocert, Demeter, monocru, monoparcelle and certified by the Interprofessionel designation of Viticulture Durable en Champagne (VDC).

The champagne has fine bubbles and after its note of citrus, finishes on a slight bit of spicy. It has only 8g. of sugar. And its label is made from recycled paper. It officially comes from the Maison à Verneuil. 

The official release date in France (it has been on the export market since 2017) is for September. That means that maybe for next year's Wimbledon matches, the tennis fans and Meghan will get to drink organic and bio-dynamic Lanson chamapagne!

An urban winery is a tried-and-true concept in familiar wine regions in the U.S. such as Napa, Santa Ynez and Willammette Valley - but folks here in Paris are still getting used to the concept. But Les Vignerons Parisiens is one of the most inviting chais I have ever visited here in France, and that it's just a few minutes walk from my office makes it even better!

So if you're visiting the city and are hankering to get that wine experience in, but have limited time, Les Vignerons is the next best thing to a visit out to Bordeaux or Burgundy. The vinification tanks are on premise and they'll even tour you around the premises, explaining how the wine is made. Finish this all off with a tasting of their red and white wines - coupled now by the divine Confiture Parisienne limited release of wine grape jellies.

Cuvées Sakanti Bali & Kilti Haiti Valrhona Chocolat

Can chocolate have cuvées, like fine wines do? That is the premise on which these two new fine chocolate releases are based upon by the Valrhona team of expert chocolate makers.

Valrhona is based in the Tain l'Hermitage region of central France. Most people don't realize it but the likes of famous chocolatiers (Patrick Roger for example) and patissiers (Pierre Hermé for example) source as much as 140 tons of Valrhona chocolate - per year! - for their masterful creations.

Championed by Frédéric Bau, the Chef Patissier and Creative Director of Valrhona chocolates, each year the famed house sources different specific locally grown cacao that has exceptional aromatic qualities. This year those two "cuvées" have been sourced from Haiti and Bali. The initiative was born in 2008 and falls under the name of Cuvées de Sourceur Valrhona. The cacao that is sourced is grown in exceptional terroir, a singular history and rare aromatic qualities.

Cuvée Sakanti Bali 68%

This year we are delighted by the Cuvée Sakanti Bali 68% that exhibits Fruity and Chocolate-y qualities.  To best experience the aromatic character of this chocolate, close your eyes, open the packet of chocolate and inhale the bananas flambé and roasted caramel scents.

The cooperative in Bali which produces this cacao was discovered by accident in 2013 by Valrhona's 'sourcing expert,' Julien Desmedt. Sakanti means 'glittering' in Balinese and this cacao has an uplifting acidity marked by its fruity notes, followed by intense chocolate with subtle bitter notes.

Fruit associations of this chocolate cuvée:  Banana, grapefruit, mango; Spice notes: frensh coriander  Aromas:  cognac, acacia honey  Dried fruits/nuts: Almonds, pine nuts, mint.

The optimal use of this chocolate is for chocolate bars.

Cuvée Kilti Haiti 66% Fresh and Balanced

The notes here are a beautiful vanilla and wonderful acid balance. Valrhona's engagement with Haiti began in 2010. It was then that they decided to pioneer a project of 38 hectares of quality-grown cacao where the house piloted a regeneration of agroforestry which is based on bio-diversity even on the same parcel of land which allows, too, for more diversification of revenue for the producers.

The word 'Kilti' means 'culture' in Haitian. Often when we think of Haiti we think of images of climactic catastrophe. But there is a lot of richness to be discovered in this land, notably too its cacao.

The tasting notes of Kilti Haiti are a light acidity on first taste, which then yield to beautiful classic chocolate notes with hints of roasted dried fruits and nuts on a base of persistent sweet-bitter.  NOTES: red fruits, pear, citronnelle; Aromas: baked cookies, ginger; SPICES: coffee, vanilla.

Best uses: chocolate bar, chocolate creams and ganache.

For an extra delightful experience, try pairing these chocolates with a range of deep, rich red wines and even other beverages such as saké, beer, tea and sparkling varietal grape juice.

Episode 33: L’Académie du Vin & Willi’s Wine Bar on Paris GOODfood+wine

For our January Paris GOODfood+wine show we're talking all about wine. This show's inspiration came from the announcement that Steven Spurrier was resuscitating L'Académie du Vin. So, of course, I reached out to his longtime friend here in Paris, Mark Williamson, owner of the legendary Willi's Wine Bar, to get the scoop. He suggested I talk directly with Mr. Spurrier when he was next in town and Voilà, the interview.

First, though, I sat down with Mark Williamson at his elegant Maceo restaurant which is just a few doors down from Willi's Wine Bar there on rue des Petits Champs just behind the Palais Royal. He filled me in on all sorts of fun tidbits including his Willi's Art Club poster initiative and what it means to be a Rhône Ranger.

Holiday Sparkling Cocktail - Crémant de Bordeaux with Tea Infusion

Looking to liven up your holiday season party-hosting scene? Try this newest sparkling tea wine cocktail recipe suggested by a savvy mixologist here in Paris...

Start with a Crémant de Bordeaux (you can also use your sparkling wine of choice).  Leave at room temperature while you infuse the glass of sparkling with a tea bag such as ginger-lemon for a demi-sec or red fruit infusion for a sparkling rosé.  Let the tea bag infuse the cocktail for several minutes.

Ingredients

  • Bottle of sparkling wine - Roche Mazet
  • Tea bags (red fruits for Rosé, ginger-lemon for Demi-sec)
  • Ice Cubes
  • Optional - tea infusded simple syrup
  • Garnish-Cranberries (rosé); Candied ginger (demi-sec )

Take out and swirl the glass of sparkling with several ice cubes to chill the liquid. Remove the ice cubes (or leave them in if you choose). Garnish with a sprig of cranberries or candied ginger. 

As a slight variation to this recipe, prepare a tea-infused simple syrup beforehand. When you mix the cocktail, add a dash of the syrup just as you are chilling the liquid. The syrup can be lightly sweetened or more exuberantly sweetened, depending on personal taste. 

The best sparklings to try this cocktail recipe with this season are Roche Mazet sparkling wines, Crémant de Bordeaux. Their newest is the Crémant de Bordeaux Malésan which is a blend of Sémillon and Cabernet Franc.

Episode 31: Fat.Paris And People of Its Small Plates & Wine Bars - Paris Podcast

The leaves are falling, the clocks have been turned back...Autumn is here in all its colorful beauty with Winter just on the horizon... A poem I saw recently by Toulouse-Lautrec goes something like this:

Autumn est le printemps d'hiver, or Autumn is the springtime of winter...

For this episode of Paris GOOD food+wine, we bring you a glimpse into some of the wine bar and small plates culture of Paris. This season, so full of harvests, and the enjoyment of those harvests, easily gets us thinking about glasses of good French red wines shared over plates of savory morsels of meats, sausages and slow-stewed vegetables.

Two young men, both firmly entrenched in the city's fabric of restaurants, bars and wine, speak to us candidly about their businesses and their newest endeavors.

First up we hear from Max Paton Williams, an Englishman who's grown up his whole life here in Paris, making him a thorough Franco-Anglo hybrid. He found his passion for wine and food early on in life and is already making his mark on the local culinary scene. He's currently the manager at Wim à Table which is the celebrated Belgian chef, Wim van Gorp's, newest small-plates and wine bar in the Batignolles district of Paris.

Then we hear from Terence Schweitzer, who's a Franco-American mix. He also spent his entire life in Paris, save for a few years when he lived in Brooklyn. With a couple of buddies he's recently opened a bar/event space/ art gallery in the upper Marais district. It's called Fat. Paris.

Both of these guys are under 30 and offer that fresh perspective on where they may be taking the city's culinary landscape in the coming years, starting now.
